Episode 5 of Cooking Tales features Manal Alalem – who returns for a second time to show host Ahmed Al Nasheet and special guests Rawan and Rayan Fahmi that plant-based cooking is the way moving forward.

In this episode, Manal makes Fatayer using only plant-based ingredients: Ahmed, Rawan, and Rayan also join in to help, but they seem to be doing a lot more eating than cooking. Before starting, Rayan asks Manal a very important question: how do they use cheese in a plant-based dish? Plant-based cheese and cream, kindly provided by Flora Plant and Violife – of course! Manal specifically uses Violife cheese for the creamy Fatayer filling and then lightly brushes the unbaked pastries with Flora Plant cream before putting it in the oven in order to give it a nice, golden crisp!

Ultimately, Manal shares this plant-based Fatayer recipe to educate viewers on why plant-based eating is extremely important: not only is it good for your health and well-being but it will ultimately help save the planet. Not to mention Flora Plant cream and Violife cheese are super tasty vegan alternatives!

Ultimately, all four agree that a plant-based diet would lead to a healthier and more sustainable way of life:  therefore – in order to achieve a more sustainable global community – Manal recommends that even one plant-based meal per week would be a good starting point.

Recipe

Ingredients:

  1/2 kg of pizza dough
  1/2 cup of Violife crumbled feta
  1/2 cup Violife shredded mozzarella
  2 tbsp chopped fresh parsley
  A dash of nutmeg
  1 tsp nigella seeds (optional)
  2 tbsp Flora Plant cream or butter to brush the fatayer

Instructions:

  1. Defrost the pizza dough. Preheat your oven to 180 degree celsius. Line a baking sheet with parchment paper.
  2. In a bowl combine the Violife feta, Violife mozzarella, parsley and nutmeg. Crush with a spoon to break down the chunks of Violife feta. You want the mixture to look like a very thick paste.
  3. On a floured surface, knead the dough until it is stretchy. Roll into a log and cut into ten pieces.
  4. Roll each log into a ball, set aside and cover them. Roll out each ball into an oval shape and place about 2 tablespoons of filling down the center of the dough.
  5. Fold over the top left of the dough over the filling and press down. Fold over the opposite side over the folded side and pinch.
  6. Repeat the process at the bottom of the pastry. Brush with Flora Plant cream or butter and place on parchment paper on a baking sheet. Sprinkle with nigella seeds.
  7. Repeat process until all fatayers have been made.Bake at 180C for 10 – 15 minutes or until golden brown.
