Chances are your social media feeds have been recently flooded with photos and videos of either fluffy coffee or banana bread.
As social distancing has become mandatory across many countries around the world, introverts and extroverts alike have had to find ways to entertain themselves indoors.
These hard times have made painters, TikTok dancers and stress-bakers out of all of us. But it’s baking bread, in particular, that seems to have surged as a regular household activity.
According to Google Trends, searches for banana bread have gone up 84% in the UK in the last 30 days, and 54% worldwide. Such is its popularity, one astute person went so far as to ask Twitter: “Is Covid-19 sponsored by banana bread?”

If you’re keen on joining the Banana Bread Bandwagon (BBB), here’s a simple delicious, recipe by the renowned Dubai-based chef of Dalia’s Kitchen…
3 very ripe bananas, well mashed
3 melted butter
2 eggs
1 cup sifted flour
~1/2 cup white sugar (depends on the ripeness of the bananas)
1/2 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp allspice
1/2 tsp salt
1/2 tsp baking soda
1/2 tsp baking powder
Preheat oven to 180C
In bowl, whisk the bananas, eggs, sugar and melted butter.. In another bowl, sift together all the other ingredients and add them to the banana mixture, combining them well but without over mixing.. Pour the batter in medium sized loaf (aligned with parchment paper if you prefer) and bake for about 23 minutes or until you insert a toothpick and it comes out dry.. You can also add nuts or chocolate chips before pouring the batter into the baking dish..
Happy Baking!
